# Directions:
01 - Place grated pumpkin in a clean kitchen towel and firmly squeeze to remove excess liquid.
02 - In a large bowl, combine pumpkin, onion, garlic, breadcrumbs, Parmesan, egg, cumin, smoked paprika, nutmeg, salt, and pepper. Mix thoroughly until mixture holds together.
03 - Shape mixture into small nuggets, about 1 tablespoon each, ensuring uniform size.
04 - Roll each nugget in panko breadcrumbs to achieve an even coating.
05 - Heat approximately 1/2 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
06 - Fry nuggets in batches, turning occasionally, until golden brown and crisp, about 3–4 minutes per side.
07 - Transfer cooked nuggets to paper towels to drain excess oil. Serve warm.
